Asparagus Frittata

Steps
  • Half (or quarter) the potatoes
  • Bring a pan of water to the boil and add the potatoes for about 10mins
  • Chop the asparagus into 5cm segments and add to the potatoes for about 5mins
  • Meanwhile dice the onion and fry with a little oil on a medium heat until softened
  • Drain the water from the potatoes and asparagus and add to the onion
  • Season with a pinch of salt and pepper to your taste
  • Whisk the eggs with a splash of water (you'll want about 4-6 eggs depending on how many you're feeding), if you're adding some grated cheese now's the time
  • Add the eggs to the frying pan (they should just about cover the potatoes)
  • Allow the egg mixture to cook through (try covering your frying with the lid to help the top cook or if your pan allows brown in the oven for 5mins)
  • Serve with a side salad and enjoy
