Butternut Kale soup

    Onion
      Kale
        Butternut Squash
          Creme Fraiche
Steps
  • Chop 1 large or 2 medium onions and add to a large pan with a big knob of butter
  • While the onion softens remove the skin and seeds from the squash and cut into 2cm cubes
  • Once the onion has softened, add 2 vegetable stock cubes to the pan and 2 pints of boiling water
  • Stir until the stock cubes are dissolved and then add the squash to the pan
  • Cover and simmer for 10 minutes while you roughly chop the kale (you want 3-4 good handfuls)
  • Add 1 tsp of salt, ground coriander, pepper, thyme and parsley to the pan and stir through
  • Now do the same with the kale and cover for a further 15-20mins
  • remove from the heat and blitz using a food processor or hand blender
  • To finish stir through 4 or 5 tbsps of creme fraiche before you enjoy!
