Super Onion Soup

  • You’ll need about 10-12 small onions or 3-4 large/medium
  • Thinly slice the onions, if using small ones then slice them whole, medium or large half them first
  • In a large saucepan heat 3tbsps of olive oil then add the sliced onions, move them around to coat with the oil
  • Cook the onions on a medium heat for a good 10 minutes to soften, then increase the heat a little and add a sprinkle of sugar to help caramelise
  • After about 20 minutes once the onions have browned, add 1-2cloves of crushed garlic and continue to cook for a further 5 minutes
  • Add a splash or two of dry white wine (or Vemouth/Brandy), 1 tsp of thyme and reduce the alcohol for 2 minutes
  • Next add 750l of beef or chicken stock (use 2 stock cubes)
  • Cover the pan with a lid, reduce the heat to low and allow to simmer for 20-30 minutes
  • To serve ladle into a bowl and top with some toasted bread and melted parmesan (a slice of french stick if you have it)
