Butternut Pasta

    Mushrooms
      Carrots
        Butternut Squash
          Pasta
            Milk
              Parmesan
                Tomato Puree
Steps
  • Peel and cube a small butternut squash and 1 medium carrot
  • Bring a pan of water to the boil and add the squash and carrot, cook until tender
  • Transfer the cooked veggies to a food processor and add 2 tsps paprika, 2 tsps cumin, 1 tbsp tomato puree, 1 tbsp red wine vinegar or cider vinegar and season
  • Now add 200ml milk and blitz until smooth add more milk if needed to thin out
  • Meanwhile Top up the vegetable water and add about 500g pasta and return to the boil until the pasta is cooked
  • Slice the mushrooms (about 200g) and fry them in a little oil
  • Drain the pasta once cooked, combine with the mushrooms and fold in the sauce
  • Finally add 50g grated parmesan and stir before serving
