Halloumi Veg Ratatouille

    Peppers
      Aubergine
        Onion
          Halloumi
            Chopped Tomatoes
Steps
  • Preheat the oven to 200c and chop the veg into small cubes
  • Add the veg to an oven proof dish, season and coat with olive oil, then mix and cook in the oven for 25mins
  • Stir the veg half way through cooking, slice the halloumi
  • Once the veg has cooked add the chopped tomatoes and mix, top with the sliced halloumi and return to the oven for 5-10minutes
  • Meanwhile prepare some rice or couscous or slice some crusty bread to accompany
  • Remove from the oven and serve with your desired side
