Grapefruit French Toast

Steps
  • Add the juice of one large grapefruit to a pan with 2tbsp of honey and reduce to a syrup
  • Mix an egg with 1tsp of ground cinnamon and soak the bread thoroughly
  • Heat a small chunk butter in a frying pan and cook the egg soaked bread for 3-4mins on each side
  • Place the toast on a plate, drizzle with the grapefruit syrup and pop a dollop of mascarpone on top and serve, (add half a sliced avocado if you have one)
