Orange and Mascarpone Chicken

Steps
  • Mix the zest of 1 orange and juice of 2 oranges with 150ml of masala and 2 crushed cloves of garlic
  • Score the top of the chicken breasts (quite deep) about 4 times and marinade in the orange masala mixture for at least an hour, preferably overnight
  • Heat a little oil in a frying pan and brown the chicken on each side
  • Add the orange masala mixture to the pan and bring to a simmer for 15-20mins to cook the chicken through
  • Add the mascarpone to the pan and stir until mixed, then reduce to a creamy consistency
  • Serve with boiled new potatoes or rice and some vegetables
