Jerky Rice

Steps
  • Dice the chicken and slice the pepper into good size cube (suitable for a skewer)
  • Place the chicken and pepper on a skewer or in an oven proof dish and coat with jerk sauce, then place in the oven for 25-30mins (turning after 10mins)
  • Add the coconut milk, kidney beans (including sauce) and a cup of water to a pan and bring to the boil
  • Once boiling add the rice, a few chilli flakes, zest and juice of the lime and cook until all the liquid has been absorbed by the rice (stirring frequently to prevent the rice sticking)
  • When the chicken and peppers are cooked remove from the oven and plate up
  • Add your coconut rice side and enjoy
