Aubergine & Spinach Tart

Steps
  • Preheat the oven to 200c
  • Dice the aubergine into small pieces and place in a bowl, sprinkle with salt and mix with a little oil
  • Then add to a pan and cook on a medium heat until soft
  • Next add the spinach (2-3 good handfuls) and let it wilt in the pan
  • Roll out the pastry into a rectangle or whatever shape takes your fancy it probably wants to be about 1/2cm thick
  • Place the pastry into a lined baking tray and then cut some baking paper (leave about 2-5cm as a border) and place some cooking pebbles on it or an oven proof dish if you don�t have any
  • Pop the pastry in the oven for 10-15 mins (keep an eye on it) and allow the edges to rise
  • Add the cream cheese to the aubergine and spinach and mix through until all is coated nicely
  • Remove the pastry from the oven and carefully remove the pebbles and baking sheet from the middle
  • Spoon the mixture from the pan into the middle of the pastry and return to the oven for another 10mins
  • Serve with a nice side salad, perfect for a summer afternoon!
