Steps
  • Heat a little oil in a pan and add a diced pepper, diced onion, 2 crushed garlic cloves and chopped celery (2 sticks)
  • Dice the chicken into small cubes and sprinkle over 1tsp cayenne pepper (if you don't have any you can use chilli flakes - sparingly!), then add to the pan once the veg has softened
  • Allow the chick to brown for 5 minutes and add the chopped tomatoes and rice to the pan with 0,5l of chicken stock (per 200g of rice)
  • Once boiling cover and reduce to a simmer for about 40 minutes, keep stirring throughout to prevent the rice from sticking to the pan (if it dries out before the rice is cooked add a bit more water)
  • Once the rice isn't crunchy anymore season and stir in some parsley (if you're using ham then now's the time to dice it and add to the pan before serving)
