Shepherds Pie

Steps
  • Preheat the oven to 200c
  • Soften the chopped carrots, onion and celery with a little oil over a medium heat
  • After 5-10 minutes add the mince and brown for a further 5 minutes
  • Add about 3tbsp of Worcestershire sauce (if you don�t have any try 2tsp soy sauce and 1tsp light brown sugar), 2tsp of tomato pur�e and 150-200ml of lamb or beef stock (if using chopped tomatoes you won�t need lots of stock)
  • Allow the mince mixture to reduce simmering for about 20 minutes
  • Meanwhile bring a pan of water to the boil and cook the peeled potatoes (about 1kg will do, but if you have less just make a thinner topping)
  • After about 20 minutes drain the potatoes and mash until smooth, then stir in 4tbsp of milk, a knob or 2 of butter and season
  • Now season the mince mixture and add to an oven proof dish, spoon over the mashed potatoes and spread out to cover the top (roughing up the top with a fork) and place in the oven for 30-35 minutes until golden on top
