Hash Brown Breakie

Steps
  • Grate the potatoes (about 4 spuds will make 6 large hash browns) into a tea towel and squeeze the liquid out
  • Then put the potatoes into a large bowl and add the finely chopped onion, 1 beaten egg and season generously with salt and pepper
  • Combine the mixture, then heat some oil in a frying pan and spoon in the hash brown mixture, shaping the dollops to your desired size (be sure to lightly press them down to help them stay intact when turning)
  • Allow then to cook on a medium/high heat for about 3-4minutes and then turn (carefully) and cook on the other side for 3-4minutes
  • Once cooked place in the oven to keep warm (around 100c should do)
  • Next slice your tomato in half (not top to bottom, through the sides) and add it to the frying pan together with your sliced mushrooms
  • if you prefer scrambled egg bows the time to mix it up in a separate bowl and add to a pan over a medium heat with a little oil
  • Don’t forget to turn your tomato halves and cook the other side (they’ll need 5 minutes each side)
  • Once the it’s all cooked to you liking plate up and enjoy!
