Simple Pizza

Steps
  • In a bowl mix together 450g plain flour, 1tsp salt,1 packet of fast action yeast (about 2tsp), 1-2tbsp olive oil
  • Make a well in the middle and add 250ml luke warm water and combine into a dough, kneading for 5 or so minutes
  • Then cover the bowl with a tea towel and place in a warm dry place to rise for 2hrs (if you're short on time 1hr should be ok)
  • To make the tomatoes sauce, add 1 crushed garlic clove to a pan with a little oil on a low heat for a minute and then add a chopped onion and turn up the heat a little until the onion is soft
  • Next add the chopped tomatoes to the pan with 1tbsp of mixed herbs (or basil/oregano)
  • Allow to simmer for 10 minutes and then remove from the heat and let the mix cool
  • If you have a hand blender then you can blitz the tomato sauce (I like to do this as any left overs double up nicely as a pasta sauce)
  • When the dough has risen, preheat the oven to 250c (you want is hot hot hot), divide the dough into 3 or 4 and turn out on to a floured surface and using a rolling pin (don't judge me Italians) shape into pizza bases
  • Place the base on a baking tray and spoon over your tomato sauce, next up some lovely sliced mozzarella and finally a few thinly sliced mushrooms
  • Place the pizza in the oven for about 8-10 minutes until the crust is golden
