Fish Bake

Steps
  • Preheat the oven to 180c, add 450g haddock to a pan with 350ml milk and bring to the boil
  • Simmer for 2-3 minutes until the fish flakes with a fork and remove the fish from the pan and place into an oven proof dish flaking into chunks (get rid of the skin)
  • Strain and set aside the milk
  • Heat a little oil in a pan and add 2 chopped leeks, cooking for 5 minutes
  • Once softened add the leeks to the fish flakes
  • Melt 50g butter (or spread) in a pan and add 2tbsp plain flour
  • Using a whisk stirring constantly add the milk to the pan and bring to the boil, then reduce to a simmer
  • Once the sauce thickens pour over the fish and leeks
  • Sprinkle over some chopped dill (or parsley) and then blitz 3-4 slices of bread into crumbs and cover the top of the dish with them
  • Bake in the oven for 10-15 minutes and serve (with some seasonal veg)
