Puffed Veggie Tart

Steps
  • Preheat the oven to 180c, roll out the puff pastry sheet to about 0,5cm thick rectangle, place it on a lightly greased baking tray and brush the edges with a beaten egg
  • Cut some grease paper, place over the pastry leaving a 3-4cm border and place some cooking pebbles on in the centre
  • Cook in the oven for 10-15 minutes and allow the pastry to rise at the edges
  • Dice the aubergine and fry with a little oil for 5 minutes, add the thinly sliced onion and 100g of mushrooms, cook for a further 5 minutes until everything has softened
  • Stir in 100g of cream cheese and a splash of milk, continue to heat through until the mixture has thickened a little
  • Remove the pastry from the oven and spoon on the aubergine mixture
  • Return to the oven for a further 10 minutes and then slice and serve with a side salad
