Bez s Seafood Paella

      Squid
        Onion
          Calamari
            Chicken Breast
              Tomatoes
                Pimento Peppers
                  Rice
                    Safron
                      Clams
                        Mussels
                          Green Beans
Steps
  • Start by making the stock, then peel and roughly chop the onion, now peel the Garlic
  • Chop the chicken, squid, pepper and green beans
  • Grate the tomatoes
  • Boil clams and mussels (discarding any that remain open when tapped)
  • Remove the clams and mussels once cooked and keep the broth, as we will use it to cook the rice (little secret!)
  • Heat 3 tablespoons of olive oil (virgin extra) in a large pan over a medium heat and add the langoustines/prawns stirring it occasionally
  • Remove the langoustines after 5-7 minutes
  • Now add the onion and garlic, fry for 7 to 8 minutes or until softened and golden
  • Add the chicken and squid/calamari and get a golden colour over them
  • Make a circle in the middle and add the grated tomato with some olive oil if required and the veggies
  • Mix everything together and add pimento / paprika / colouring
  • Add the rice! Remember to use paella rice (arroz bomba) or similar
  • Add the stock and bring it to boil with high heat
  • Heat up 10 minutes and the rice will evenly distributes over the pan
  • Now stir through the saffron
  • After 8-10 minutes, bring the heat to medium and start adding the langoustines, mussels and clams evenly around the top of the paella
  • Cook for about 8 minutes
  • If the rice is cooked at the top layer, then reduce the heat to low and let it sit for 5 minutes
  • If not, don’t panic just add more water and let it cook at medium temperature
  • Once the rice is cooked, turn off the heat and let it sit for 10 minutes
  • Enjoy!
