Steps
  • Dice all the veg into 1-2cm chunks
  • Heat 2tsp of oil in a large pan and cook the courgette and green beans for about 5 minutes until slightly charred
  • Place the beans and courgette into an oven proof dish and add the aubergine to the pan with another tsp of oil and a tsp of salt
  • Once softened add to the dish with the other veg, crush 2-3 cloves of garlic
  • Add the tomatoes, spring onions and garlic to the pan with another tsp of oil
  • After 2 minutes add the kale and 2-3tbsps of red wine vinegar (or 75ml of red wine) and a tbsp of sugar
  • Once the kale has wilted add the veggies back to the pan and mix through
  • Cook everything together for 5 minutes and then serve
