Avo and potatoe croquettes

Steps
  • Peel 4-5 medium potatoes, halve them and add to a pan of boiling water for 10-15 minutes until you can pass a knife through them easily (careful not to over cook them)
  • Destone and remove the avocado from the skin, then dice into small chunks
  • Remove the potatoes from the water and place into a large bowl, now mash the potatoes using a fork or masher
  • Then using a spoon combine with the avocado and place in the fridge to chill for 45-60mins (if you're in a rush you can skip the fridge step but the next bit will get messy)
  • Prepare 3 bowls, 1 with 4/5 tbsps of plain flour, 1 with a beaten egg and 1 with the bread crumbs (if using a loaf of bread then pop a couple of slices in a food processor or use a cheese grater)
  • Preheat the oven to 180c and remove the potatoes & avocado mixture from the fridge and shape into kiwi sized rounds (not sure that's the right term but look at the picture and you'll get the idea)
  • Pass each round through the bowls, (flour then egg then bread crumbs) coating completely each croquette fully (I use a fork to turn them through each bowl)
  • Place the coated croquettes on to a baking tray and cook in the oven for 20-25 minutes turning mid way through
  • Serve with a dipping sauce or side salad as you choose
