Spanish Chicken

    Chicken Breast
      Onion
        Red Chilli
          Cherry Tomatoes
Steps
  • Heat some oil in a saucepan on a medium heat and add one thinly sliced onion, cook until softened
  • Then add 2 diced chicken breasts to the pan and brown/seal the chicken
  • Dice a red chilli (be sure to remove the seeds) and add to the pan with the chicken together with a tsp of ground cinnamon
  • In a measuring jug add 1 chicken stock cube, 1tbsp honey, 2tbsp red wine vinegar 1/4 tsp turmeric, 1/2 tsp paprika and 100ml of boiling water and give it a good stir
  • Now add 8-10 halved cherry tomatoes to the pan together with the stock mixture
  • Cook for a further 15mins until mix has reduced a little
  • Serve with some conscous, rice or just simply dip a nice crusty loaf and soak up the delicious stock!
