Halloumi and Courgette fritters

Ingredients

    Courgettes
      Onion
        Lemon
          Egg
            Halloumi
              Plain Flour
Steps
  • Grate 1 medium/large courgette into a tea towel and squeeze out all the water then add to a medium size mixing bowl
  • Grate in 1 onion, 1 pack of halloumi (about 200g) and add about 50g of plain flour, the rind of 1 lemon and 1 large egg
  • Season well and combine using a spatula or wooden spoon
  • Place some baking paper on a tray and using your hands shape the mixture into rounds and place on the baking paper
  • Allow the rounds to chill in the fridge for about 30mins
  • Fry the rounds in a frying pan over a medium to high heat pressing down as you put them in the pan (best to use a fish slice and spoon here to ensure they keep their shape)
  • Flip the rounds over and cook the other side until browned on both sides (they'll probably take about 5mins each side depending how thick you've made them)
  • Enjoy with a side salad or on their own
