Red Pasta and Halloumi

    Tomatoes
      Red Chilli
        Beetroot
          Linguine
            Halloumi
              Tomato Puree
Steps
  • Bring a pan of water to the boil and add the linguine
  • Slice the halloumi into 5mm slices and grill until browned
  • Deseed and thinly slice 1 or 2 red chillis and heat in a pan with a little oil
  • Dice 2 medium tomatoes and add to the pan with the chillis
  • Now dice 1 cooked beetroot, drain the pasta once cooked and return to the pan
  • Mix in the beetroot, chillis, tomatoes and season
  • Add 1 tbsp of tomato puree, 1 tbsp lemon juice and stir through the pasta
  • Plate up the pasta and top with some cubes of halloumi
