Butternut Squash Soup

        Butternut Squash
Steps
  • Heat a little oil or butter in a saucepan and fry 2 cloves of crushed garlic
  • After a couple of minutes add 1 medium chopped onion to the pan and fry for a further 3-4 minutes
  • Add a splash of water and continue to cook while you chop the squash
  • Remove the seeds and cube about 800g the squash without peeling and add to the pan
  • Add about 700ml of vegetable stock and bring to the boil, cover and simmer for 30 minutes
  • Blitz the cooked squash until a smooth consistency, return to the pan and add some parsley, season with salt and pepper
  • Serve with a crusty roll
