Spinach and Artichoke Spicy dip

    Spinach
      Feta
        Parmesan
          Jerusalem Artichokes
Steps
  • Peel and cube the artichokes (about 2 handfuls) and add to a pan of boiling salted water
  • Cook the artichoke for about 20-25 minutes and then add to a food processor 2 cloves of garlic, 2tbsp lemon juice (about half a lemon) and 50g of parmesan cheese
  • Remove the artichoke from the water with a slotted spoon (reserve the water) and add to the food processor
  • Blanche a handful of spinach in the water, meanwhile blitz the artichokes adding a couple of tablespoons of olive oil until you get a smooth consistency
  • Transfer the artichoke paste to a bowl and add the spinach (be sure to squeeze the excess water out first) and add some ground black pepper, stir through
  • Now top with 1/2 tsp of chilli flakes, 1/2 tsp parsley, a drizzle of olive oil and break some feta over the top
  • Serve with crackers or some raw veggies
